The Treacle is essentially a rum old fashioned with an apple juice float.

This is one of those combinations of flavours which manages to be much more than the sum of its parts. It’s certainly sweet, but in an unctuous and more-ish way – just like treacle!

This is a slightly tweaked recipe, more similar to one we had on the menu at my first bartending job.

Ingredients

  • 60ml (2oz) dark rum

  • 10ml (1/3oz) demerara sugar syrup

  • 15ml (1/2oz) cloudy apple juice

  • 2 dashes black walnut bitters

  • Orange twist to garnish

Equipment

  • A jigger

  • A mixing glass

  • A barspoon

  • A julep strainer

  • A rocks glass

  • A big block of ice

Method

Prep your orange twist.

Add all of your ingredients except the apple juice to the mixing glass, add plenty of ice and stir until chilled and diluted.

Strain over a big block of ice and float the apple juice on top.

Give your twist a sharp fold over the top of the drink to expel the oils and drop in to garnish.

Enjoy!

Suggested Spirits

Myers was the original rum used in this cocktail and it certainly makes a great one, but really any thick and chewy pot still or Demerara rum will create a similar effect – Pussers, Appletons, El Dorado or if you’re in Australia and want to support local then Beenleigh or Inner Circle.
