Chartreuse may not be the first thing you’d reach for to pair with Irish whiskey, but if you think about it, we have monks to thank for both so maybe there was a little divine inspiration involved in the Tipperary cocktail!

Honestly I was a little sceptical of it at first, especially not being a huge Chartreuse fan – you can revoke my bartender card now – but with some tweaking of ratios it ends up being a smooth and elegant Manhattan with a fun herbal note.

Ingredients

  • 60ml single pot still Irish whiskey

  • 20ml sweet vermouth

  • 10ml green Chartreuse

  • 2 dashes orange bitters

  • Lemon twist to garnish

Equipment

  • A jigger

  • A mixing glass

  • A julep strainer

  • A chilled coupe glass

Method

Prepare your lemon twist.

Add all of your ingredients to your mixing glass and fill with ice.

Stir with a barspoon by placing the back of the spoon against the inside of the glass and pushing the ice around until chilled and diluted.

Use your julep strainer to hold the ice back in the glass and pour in to your chilled coupe.

Fold your twist over the drink to express the oils, twist, and place in the drink to garnish.

Suggested Spirits

Given that this heroes the whiskey, using a quintessentially Irish single pot still makes sense. We’ve used Redbreast 15 but I’d understand if you’d prefer something easier on the pocket.

A light and herbal sweet vermouth like Dolin Rouge, Martini Rosso or Cinzano Rosso also work.

We like the floral aspect of orange bitters but Angostura can be substituted.

Green Chartreuse is quite a unique product, but you can leave it out and just make an Irish Manhattan if you can’t get your hands on it.
