The Rum Monte Sour

Is this the Trojan Horse of Amaro cocktails? The Rum Monte Sour is like hiding veggies in pasta sauce for kids, if you are on the fence in regards to Amaro this might just be the drink to get you over that fence and enjoying all the wonders Amari have to offer!

While the rum may come first in the name, but this sour is all about the Montenegro. On the more approachable end of the amaro category, it has converted many a drinker to the bitter side. In a classic sour it is fresh and approachable, with the rum just providing a slightly boozier backbone to the citrus and spice of the Montenegro.

Ingredients

  • 45ml (1 1/2oz) Amaro Montenegro

  • 15ml (1/2oz) dark rum

  • 30ml (1 oz) lemon juice

  • 5ml (1/6oz) sugar syrup

  • 10-15ml egg white

  • Orange twist to garnish

Equipment

  • A jigger 

  • Shaker tins

  • A hawthorn strainer

  • A fine strainer

  • A rocks glass

  • A large ice block

Method

Add all of your ingredients to your shaker tins and dry shake (without ice) to emulsify – hold the tins tightly!

Add ice and shake again, then strain over good ice in to your rocks glass, using the hawthorn strainer to hold back the ice in the shaker tin and pouring through the fine strainer.

Fold your twist over the top of the drink to expel the oils, then arrange in glass to garnish.

Suggested Spirits

As it’s only a small amount of dark rum it doesn’t matter too much, just something with enough weight to underpin the less boozy amaro – our well rum at Bomba is Plantation Dark so that’s what we’ve gone with here but really any good quality one will work.

Montenegro is ideal in this cocktail as it is a more approachable amaro, but Amaro Nonino would be the closest.
